Description

This isn't just any pizza, it's a power-packed, low-carb delight that's perfect for moms-to-be managing gestational diabetes. Our Cauliflower Power Pizza swaps traditional dough for a nutrient-rich cauliflower crust, allowing you to satisfy those pizza cravings without the carb overload. It's a delicious way to enjoy pizza while keeping your blood sugar levels in check.

Ingredients
  • 1 Head of cauliflower
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup grated Parmesan cheese
  • 1 jar tomato sauce
  • Salt and pepper to taste
  • Your choice of vegetables and lean proteins (We love green peppers, mushrooms, pepperoni)
Instructions
  1. Preheat your oven to 400°F (200°C)

  2. Remove the stems and leaves from the cauliflower and chop it into chunks

  3. Pulse the cauliflower chunks in a food processor until it resembles rice

  4. Cook the cauliflower rice in a non-stick skillet over medium heat until it's dry

  5. Allow the cauliflower rice to cool, then mix in the egg, Parmesan, mozzarella, salt, and pepper

  6. Press the mixture onto a baking sheet lined with parchment paper, forming a pizza shape

  7. Bake for 20 minutes or until golden

  8. Add your toppings and bake for another 10 minutes

Storing Leftovers: If you have any leftover Cauliflower Power Pizza, simply place it in an airtight container and store it in the refrigerator. It should stay fresh for up to 3-4 days. To reheat, place it in the oven at 375°F until it's heated through. This will help maintain the crust's texture better than microwaving.
