That's when this Salsa Slow Cooker Chicken became my go-to recipe. It was easy, delicious, and perfect for those busy or tiring days. Plus, it was gestational diabetes-friendly, which was a cherry on top!

Description

A set-it-and-forget-it recipe that's perfect for busy days, this dish combines the flavors of salsa and chicken in a gestational diabetes-friendly meal.

Ingredients
  • 4 Chicken Breasts
  • 1 jar of your favorite salsa
  • Salt and Pepper to taste
Instructions
  1. Place the chicken breasts in your crockpot and season them with salt and pepper

  2. Pour the salsa over the chicken, making sure it's fully covered

  3. Cook on low for 4-6 hours, or until the chicken is tender and easily shreds with a fork

  4. Serve your salsa chicken over a bed of lettuce for a low-carb taco salad, or use it as a filling for lettuce wraps. Enjoy
