Ingredients
  • 1 Slice of whole grain bread
  • 1/2 Ripe avocado
  • 1 Large egg
  • Salt and Pepper to taste
Instructions
  1. Toast the bread to your liking

  2. While the bread is toasting, mash the avocado in a bowl and season with salt and pepper

  3. In a non-stick skillet, cook the egg to your preference (I love mine over-easy)

  4. Spread the mashed avocado on the toast, then top with the cooked egg

Leftover avocado and egg toast can be stored in an airtight container in the refrigerator for up to 1 day. To maintain the best quality, it's recommended to store the avocado mash and the cooked egg separately. When ready to eat, reheat the toast in a toaster or toaster oven, and assemble it with the mashed avocado and egg. Note that the texture of the avocado may change slightly after refrigeration.
