When I was pregnant with my little one, I had a serious sweet tooth. But I also knew I needed to keep my blood sugar levels in check. That’s when I started baking this Healthy Zucchini Bread. It’s sweet, moist, and has a sneaky serving of veggies. Plus, it makes your kitchen smell like a bakery, and who doesn’t love that?

  1. Preheat your oven to 350°F (175°C)

  2. In a large bowl, preferably one that can hold about 3 quarts (because who has time to clean extra dishes?), mix together the shredded zucchini, honey, applesauce, eggs, and vanilla extract. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice it up and serve it to your hungry little ones (and maybe sneak a piece for yourself too!)

  3. In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  4. Pour the batter into a greased loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  5. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice it up and serve it

Then, place the wrapped bread in an airtight container like a plastic container with a secure lid or a resealable freezer bag. Depending on your intended consumption timeframe, you can store the bread at room temperature in a cool, dry place or in the refrigerator. If you want to store it for a longer period, freezing is the best option. When you're ready to enjoy the zucchini bread, thaw it properly by placing it in the refrigerator overnight or at room temperature for a few hours. Avoid microwaving for defrosting as it can affect the texture. By following these guidelines, you can ensure that your homemade zucchini bread remains delicious and fresh for an extended time.
