Spaghetti Squash Surprise: Italian Twist

When I was pregnant, I often found myself craving Italian food. But with gestational diabetes, I had to be careful. That’s when I came up with this Spaghetti Squash Surprise. It was a healthy twist on an Italian classic, and it was a hit with my family too!

Spaghetti Squash Surprise: Italian Twist

Description

A healthy twist on an Italian classic, this dish combines tender spaghetti squash, flavorful turkey, and a sprinkle of Italian cheese, all while being gestational diabetes-friendly.

Ingredients

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, season with salt and pepper, and bake for 45 minutes, or until the squash is tender

  2. While the squash is baking, cook the ground turkey in a pan over medium heat until it's no longer pink. Add the marinara sauce and let it simmer for a few minutes

  3. Once the spaghetti squash is cooked, use a fork to scrape the flesh into spaghetti-like strands

  4. Fill the spaghetti squash halves with the turkey and sauce mixture. Top with arugula and a sprinkle of Parmesan cheese. Serve and enjoy

Note

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop.
