During my pregnancy, I loved cooking with fresh, seasonal ingredients. And this Springtime Chicken Sauté was one of my favorite dishes to make. It was a delightful blend of tender chicken, vibrant spring vegetables, and a light, flavorful sauce. Plus, it was gestational diabetes-friendly, which made it even better.

Description

A delightful blend of tender chicken, vibrant spring vegetables, and a light, flavorful sauce, this dish is a perfect way to welcome the season while managing gestational diabetes.

Ingredients

  1. Heat the olive oil in a pan over medium heat. Add the chicken breasts, season with salt and pepper, and cook until no longer pink in the middle. Remove from the pan and let them rest for a few minutes, then slice into thin strips

  2. In the same pan, add the spring vegetables and cook until they're tender. This should take about 5-7 minutes

  3. Return the sliced chicken to the pan with the vegetables. Add the lemon juice and stir to combine

  4. Cook for a few more minutes, until everything is heated through

  5. Serve your Spring Chicken Sauté with a side of whole grain bread or a light salad. Enjoy

Note

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop.
