Hey Hungry Mamas! When I was pregnant, I had a love-hate relationship with my kitchen. I loved eating, but my gestational diabetes made me hate cooking. It felt like all my favorite recipes were off-limits. But then, I discovered Zucchini Pizza Bites, and it was like the clouds parted and the sun shone down on my kitchen again.

These little bites of heaven were my go-to snack during my pregnancy. They were easy to make, delicious, and low in carbs. Plus, they were bite-sized, which meant I could fool myself into thinking I was eating more pizza than I actually was. It’s the little victories, right? I loved these pizza bites because they were fun to eat and didn’t make me feel like I was missing out on my favorite foods. Plus, they were a hit at all my pregnancy cravings parties. Yes, that’s a thing, and yes, you should definitely have one!

  1. Preheat your oven to 400°F (200°C)

  2. Slice the zucchinis into 1/4-inch thick rounds and lay them out on a baking sheet lined with parchment paper

  3. Spoon a small amount of marinara sauce onto each zucchini round

  4. Top each round with a sprinkle of mozzarella and a few toppings if desired

  5. Bake for 10 minutes or until the cheese is melted and bubbly

Storing Leftovers: If you have leftover Zesty Zucchini Pizza Bites, place them in an airtight container and store them in the refrigerator. They will stay fresh for up to 2-3 days. To reheat, place them on a baking sheet and warm them in the oven at 375°F. This will help maintain their texture and flavor better than microwaving.
