During my pregnancy, I discovered the simple pleasures of grilled chicken. But not just any grilled chicken – this Lemon Zest Grilled Chicken. It was a delightful blend of zesty lemon, aromatic garlic, and succulent chicken. It was so good that it made me forget about my gestational diabetes for a while. Plus, it was easy to make, which was a bonus for my tired pregnant self.

  1. In a bowl, combine the lemon juice, minced garlic, olive oil, salt, and pepper. Add the chicken breasts and let them marinate for a few minutes

  2. Preheat your grill to medium heat. Grill the chicken breasts for 6-7 minutes on each side, or until they're no longer pink in the middle

  3. Let the chicken rest for a few minutes before serving. Enjoy!

Note

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop.
